Dressing on the side, please.
I've always been, you know, THAT girl. The "dressing on the side" girl. I'm also the slightly more obnoxious, "I'll have the grains bowl, hold the grains" girl. I know what I like & at this point I'm used to the weird looks. It's not a calorie thing- I just really, really love the taste of vegetables & as a T1D, I really, really hate hidden carbs. I much prefer fresh lemon or balsamic & vinegar, both of which complement, not mask the flavor of fresh veggies, as well as contain far less carbs than their conventional salad dressing counterparts. Anyway, I don't know what got into me, but I decided to see what this dressing thing is all about. So I made this low-carb Lemon-Tahini-Turmeric salad "drizzle." Because have some respect for your vegetables. Drizzle, don't drench them.
Juice from 1 fresh-squeezed lemon
2 TB Olive Oil
1/4 cup H20
1/4 cup Tahini (sesame paste)
1/4 tsp cayenne (or more for #extra kick)
1/2 tsp turmeric
1 clove pressed garlic
Salt/Pepper to taste
Simply whisk everything in a bowl. Store in airtight container in fridge for up to 5 days. Enjoy on top of roasted veggies, salad or even by the spoonful- it's that good.
