Will bolus for diabasic pumpkin bread
Fall is a diabasic's dream, just like this chocolate chip pumpkin bread made with coconut flour, and naturally sweetened with dates, maple syrup, dark chocolate & cinnamon.
- 6 large medjool dates, pitted
- 2 tbsp water
- 1/2 cup pumpkin puree
- 1/4 cup coconut oil
- 1 tbsp maple syrup
- 4 eggs
- 3 tbsp coconut flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- 1/8 tsp ground ginger
- 1/8 tsp allspice
- pinch of sea salt
- 1/4 cup dark chocolate chips (or more......)
Preheat oven to 350.
In a bowl, combine dates and 1 tbsp water and microwave for 30 seconds.
Remove dates from microwave, add other 1 tbsp water and mash, forming a paste
In a food processor, combine the date paste, pumpkin, coconut oil, maple syrup, and eggs and blend until smooth.
Add in dry ingredients (coconut flour, baking powder, and spices) and blend again until smooth.
Stir in chocolate chips.
Pour mixture evenly into a small loaf pan lined with parchment paper.
Bake for about 50 minutes, or until a toothpick comes out clean in the center.
Slice (refrain from slicing into massive pieces like me) and enjoy this pumpkin goodness!
